Valsts: Etiopija

Region: West-Arsi

Washing station: AASH PLC mazgāšanas stacija

Magic Pussy  is our most well-known Rocket Bean espresso. And not only because of its name, but it is also complex by nature. It is always sweet and juicy and has floral notes at the end of the enjoyment. It is a flavour explosion in your mouth. Once you try it, you will never forget it. It has such a long-lasting, divine aftertaste, which gives your throat a comforting sensation, like the one that makes little kittens purr whilst they enjoy their warm milk.

Taste notes - Cranberry, candied quince, chocolate mousse, orange zest.

Ethiopia

Ethiopia is known as the birthplace of coffee and it delivers rich and diverse cup quality that stands out from other origins. Land and weather conditions are ideal for the growth of coffee trees in forest farms. Each region within Ethiopia imparts a distinctive taste to its coffee, making it easily distinguishable on the palate. For instance, Sidamo coffees have a tea-like profile, Yirgacheffe presents a more floral and fresh fruit cup, while Guji combines ripe fruit sweetness with jasmine notes. In the case of West-Arsi, it stands out for its delicate citrus and berry-like acidity combined with long-lasting sweetness.

However, the exceptional cup quality is not solely attributed to the region's specificity. It is a result of the hard work of smallholder farmers who diligently cultivate and process coffee. These farmers seamlessly blend long-standing traditions with newfound knowledge each season.

West-Arsi Region

Despite having only recently gained international recognition as a distinct coffee-producing region, West Arsi boasts a rich history of coffee cultivation. Its name comes from a native Ethiopian tribe that still lives in this region- Arsi. Historically, West Arsi's coffees were categorized under the Sidamo or Harrar region names. Ethiopian Commodity Exchange officially recognized West Arsi as a standalone coffee region. This recognition spotlight started with notable achievement in the 2020 Ethiopian Cup of Excellence, where its coffee secured 4th place, contributing to global recognition of its quality together with other, more known, coffee regions.

Similar to most Ethiopian coffee regions, West Arsi provides favorable conditions for organic coffee cultivation without the use of pesticides. Farmers in West Arsi achieve remarkable results by growing coffee alongside other crops, such as false banana (ensete), which helps divert insects away from coffee trees.

Processing

The coffee cherries undergo meticulous handpicking by smallholders, who promptly deliver them to the washing station on the same day. Afterward, the cherries are hand-sorted to sort out any defective and unripe cherries. Then they are laid on raised African beds for sun drying. Throughout this period, the lot is regularly stirred and covered with nets at night to protect it from insects and animals. The drying process lasts approximately 25 days, after which the beans are separated from the remaining cherries and undergo additional drying until they reach optimal moisture levels. During this stage, noticeable defects are once again sorted out by hand. Then beans are hulled and packed in 60 kg bags and sent out to Europe.
